The way shore excursions work is that the cruise line contracts with companies at each port of call to provide the shore excursions the sell on the ships. In most cases, you can make your own arrangements and cut out the cost the cruise line adds to the trip.

Personally, I would not do the ship's excursion in Cozumel unless you absolutely can't make arrangements with a private operator for some reason, such as late arrival time in port.
Wanting to be beachfront and non-AI really limits your choices.

I've been to Fiji, but not on the Aggressor. I was on the Naia. They visit some of the same sites, so I can tell you for sure that the diving there is fantastic. You'll have a great time.
I'm about 6 ft and skinny, and I get cold easily. So take that in to consideration. I was in Fiji last year the end up June and was cold in my 3 mm full, even with a beanie. After a couple of days, I changed to my 5/4 full suit and was quite comfortable. I didn't wear the beanie with the 5/4...

You don't really need a knife to dive in the Caribbean. If you are concerned with entanglement issues, get yourself a pair of shears. They are much better than a knife.
Personally, I'd AVOID any cruise that stopped in Jamaica if your interest is scuba diving. My preference is a Western...
