Little Cayman Beach Resort. Chef makes custom meals for vegans. Pretty darn good.
I second that! The chef met with us when we arrived and planned a weeks worth of incredible vegan food. I think some of the non vegan/vegetarian people were jealous.
 
Would be interested in hearing places you’ve gone with good vegetarian food. That’s always a challenge for us too. Thus far Cozumel has some impressive vegetarian (even vegan) restaurants (just there 12/6-12/16 for our 6th visit), as did Curaçao at the end of September.
Cozumel really surprised us with how many good vegan/vegetarian restaurants were there. We spend 6 weeks in the Westpunt area of Curacao each year and although there are some vegan restaurants there is nothing like the variety that Cozumel has.
