Is the only difference the breathing adjustment, would the xtx 40 be ok for a primary for doubles?

Not sure about the XTX series but with the old TX series the only difference was the breathing adjustment. There was an upgrade you could buy and install so the TX40 would have the adjustment knob. Then it was a TX50.
Don't know about the primary for doubles but I would assume it would be okay.

They use the same 1st stage. Yes the only difference is the breathing adjustment.
