Cooking plantains can be easy. I fix them all the time. The first step is to make sure they're ripe enough. I always get them when they're yellowish brown.

Cut them in half lengthwise, then in about 2-3 inch sections and fry in hot oil. You can coat them in flour or cinamon if you want prior to frying.
