I think you'll find that most of the shops offer evening and weekend classes.

When I used Castaway scuba (castawayscuba.com) , we had an evening course on Thursday, and then did the diving on Saturday and Sunday.

Castaway SCUBA www.castawayscuba@aol.com does a home study course with Thursday night academic review.
Saturday - Pool work
Sunday - Springs for your first 2 OW dives
the Following Saturday - 2 tank Ocean dive for your final 2 OW dives.

You could try DAYO Scuba also. Tom is a very easy guy to work with on the schedule. DayoScuba.com Also he provides ALL the equipment! I mean ALL of it. And is cheaper than most shops are.
