I just don't log dives
or as almity1 calls them..... coconut turds :shakehead:

Coconut Date Rolls Recipe

2 cups fresh dates, pitted & chopped
1 cup unsweetened shredded coconut

Pulse the dates in a food processor fitted with a blade till they are minced (i own the magic bullet and it does a great job)

Move the pulverized dates into a bowl

Spoon out 2 tablespoons at a time and roll into log shapes with your hands.

Roll the date in the coconut until it is coated with coconut

Store in an airtight container in the refrigerator for up to a week.

Serve cold or room temperature.



my hubby loves these and they dont take long to make..... a healthy snack option when the energy levels are feeling low!

Sounds good. Just be aware that anything to do with coconuts is a major heart clogger.
 
Yeah... but so is anything that's really worth eating.

Perhaps instead of "a fruity, healthy snack" it should be deemed "au naterel." Is unsweetened coconut also unprocessed? I'd rather eat something made of highly fattening natural ingredients than something low fat and low sugar that's made out of things I can't pronounce!

I don't know if I've seen unsweetened coconuts around here. I've never looked. I know they have the sweetened ones. I really don't think I've seen the actual coconuts sitting out. I'll have to go look!

I also don't think I'd want to open/grate the coconut myself!
