1) The manual states that this reg is compatible with only a 21% mix. Does this mean that some type of service is required for it to be used with Nitrox?

2) The user-adjustable knob for fine tuning the effort required to intake air, in one direction (towards the front of the reg) it comes to a complete stop. In the other direction (towards the diver) it just turns and turns forever with a small click now and then. Is this normal or do I have a defective reg somehow?

Thanks

1. Like any/most regulator, they are ready to be used up to 40% of O2/EAN out of the box. BUT, due to legalities, a disclaimer has to be put on the reg to stop lawsuits in case of stupidity from the users side.
** in short, you will be fine for most recreational mixes (EAN32/EAN36)

2. That is how it works, when you hear the click, you have reached the max/min settings and should stop.

genesis has a nitrox kit for up to a 40% mix
