If I'm using saltwater tides tidal chart for destin, will those time be in eastern time or local time?

I've dived the jetties/bridge often in Destin. Got my East Pass (jetties) tides from NOAA. They were in Central Time, as is Destin. I also found that with the diurnal tides there, the charts were rarely right on. Often the stated high tide time would still see the buoys tilting in toward Choct. Bay, indicating that viscious inbound current was still going. Sometimes even an hour later I still had to wait to dive even more for the slack water of high tide.
