I'm shopping for my first drysuit, and the FX100 is at the top of my list. My LDS is a Hollis dealer, although he doesn't currently have any drysuits in stock.

What is the best way for me to determine size without being able to try things on? Are there certain things that take priority on the size chart? What about the consideration of undergarments?

This chart is generally very useful in determining size when used properly. It does add consideration for undergarment, however due to the wide variety of undergarments and thickness, we always recommend a fit test before purchase.
