Saw an article on TV the other night about some folks hunting lionfish. Some guy came up with a simple way to spear them and then, with gloves, reach around and get the fish by the snout and cutting the spines off with scissors. He says that they are pretty good eating. Didn't think to get the channel but if it comes on again I'll post it.
 
Search around -- lots of people are eating lionfish. It's a delicately flavored white flesh, and people love it. Just get rid of the splines, carefully.
 
The show is Speargun Hunter on the Outdoor channel. I saw the episode and there was a LOT of Lionfish!!

In Cozumel at the end of last years Invasion, me and some other guys went out and killed a bunch of them, turned them into tacos, and fed 9 people! They were pretty good but had a lot of bones. The DM was a pro at prepping them! On the way back, he cut off all the spines with no gloves and I think he used a knife. I can't remember if he filleted them or not, too. In about an hour after getting back to shore, we were at a restaurant/bar sitting outside by the ocean grubbing down our fresh catch! With some crabs and lobsters, too! Yummmmm!!!

You can even find lionfish cookbooks now!!
 
But... there is an article in the current month's edition of Undercurrent (undercurrent.org) suggesting that lionfish in certain parts of the sea (specifically around the Virgin Islands) may have, or have levels of the toxin ciguatera that exceed those the FDA says are safe, and you could become ill if eating lionfish there, though apparently no one has as of yet. It's not the fish itself, but the location, that suggests a heightened concern. On the other hand, Bimini serves wonderful lionfish nuggets!
