Does anyone have a good salsa recipe they would like to share? :flame:

About 100 (no kidding) - what type of salsa are you interested in?

I would love to know how they make the salsa in Cozumel!?
Nothing like good chips, salsa and a good margarita! :bounce:

You're likely referring to pico de gallo (rooster's beak), a raw, uncooked salsa (a type of salsa fresca or salsa cruda). Mostly you find this in N. Mx - in other areas (Mexico City, for example), pico de gallo is like a salad. Anyhow, you can make it in 1000 variations, depending upon your tastes. A simple starting point, from which you can experiment, is:

2 medium tomatoes, diced small
1 fresh jalapeño, seeded & minced
1 lime, juiced
1 small red onion, chopped
1-2 cloves garlic (optional, but I love it)
1/2 bunch fresh cilantro, chopped
salt & pepper, to taste

(reduce the tomato by 1 and add 2 avocados and you have a guacamole to experiment with too)

I make my own salsa w/tomatoes and peppers from my garden. I usually put in 4 jalapenos and about 2 habernos. I like it HOT!! Onions, green peppers, garlic, and then spices too!

start with a 6/8, accent the 1 and 3 beats, add a 1-2-3 4-5 percussion

mix in some horns and...

voila

Now, how on earth is a viola going to be heard over all this racket... we all know that horns and drums hardly have a concept of pianissimo means so the poor viol could actually be heard.

it would be a very large viola...

I only ask one thing....

IN THE NAME OF ALL THAT IS HOLY, IF 'MATERS AREN'T IN SEASON, USE CANNED WHOLE ONES!!!!
