There so many Helicopter tour operators it would be hard to suggest one.
But if you have not done it is an excellent experience.
Here is a link to some of my Kaua'i photos including the ride.

My wife and I thoroughly enjoyed it and were lucky to get the front seats.

Inter Island Ph. 335-5009 They depart from Hanapepe's Port Allen airport and use the big helicopters without doors. It allows for incredible pics and they also offer a short and a long ride. The long ride has lunch included and they will take you to a waterfall accessible only by air where you can swim. Make sure you contact them for reservations. Hanapepe is about 20 min. drive from Poipu.

Buy the "Ultimate Kauai Guidebook", I have followed their suggestions and was not dissapointed. Have a great trip.... PM me if you need more info.

cheers,

Some homework is in order as suggested by this article: http://www.explorekauai.com/helicoptertours.html
I certainly would like to do a chopper tour myself one day. There're quite a few places that are accessable only by chopper -- care to try trout fishing?

Kauai is a beautiful island; still quite rural in character. It's quite a storied place with many old traditions and spirituality -- reportedly the last redoubt for the fabled "menehunes" (which some believe were the last remnants of the earliest small-stature Marquesean settlers, circa 700AD, who were later conquered by the physically larger and aggressive Tahitians). Unfortunately, Kauai's been "discovered" by the rich and famous and the consequences are somewhat predictable; development is picking up steam, the locals are being priced out and moving away. History repeats. But there's a lot there to be discovered if you observe and listen carefully. I have family roots there; a long-abandoned sugar plantation camp is named for a great-grandfather (Seki); it's located in Kipu, just south of Lihue.

After going to Maui and using "Maui Revealed" getting the "Ultimate Kauai Handbook" was just a given. Best travel guides I've ever used...
