Go on a dive boat in NE coastal area. Collect large bunch of mussels. Place in mesh bag, tie securely to stern of boat, and let the force of water clean mussels as you make your way back to the dock. Okay, you can actually buy mussels at the grocery store, but what fun is that?
Scrub mussels and de-flotsam any that might still have stuff on them. Discard any that stay open after you squeeze them.
Into a large stock pot, caramelize an onion in butter. Add drained can chopped tomatoes. Pour in about a half a bottle of chardonnay. Riesling works very well with this recipe, too. (If it's too icky to drink, it's too icky to cook with. Don't skimp on the wine quality)! Drink remaining wine as you cook. Add a cup fish or chicken stock, 1/2 stick butter and ~4 cloves chopped fresh garlic. Heat to simmer. Place mussels in broth. Steam until slightly opened, about 5 minutes. Pour off broth and reduce by half on stove in shallow pan. Toss in with angel hair pasta. Top with mussels in shell. Fresh mussels are yummy! :)
