If you aren't fussy about vegetarian, then go back into town (back of 15th). Nearly all of the Mom and Pop places use local produce and cook "on the spot".

Rock-n-java would be my first choice, some very health selections, including whole wheat tortillas, ( can't even get those at restaruants in the States!)

Great topic. This has recently become a concern of mine finding out I have high cholesterol especially for my age. Besides fresh food, which I have no doubt that many Coz eateries use, I'm more going to be looking for food low in saturated fat staying away from dairy and meats especially red meat and pork. This leads me to look more toward raw vegetables which haven't necessarily agreed with me when traveling abroad. Ideally, I like more Soy offerings but I haven't seen many in all my trips. Of course, I'll be on vacation so I'll be more lenient than I normally am but I'm hopeful I'll be able to sustain on something other than a unhealthy amount of cerveza and margaritas.

We got take-away from Rock N Java's Noodle Bar this trip. Yummy! Pick your noodles or rice, pick your toppings and pick your sauce. Great selection of different veggie choices, tofu (although I prefer extra firm for stir fry or noodle dishes... theirs was a little too mushy for me) chicken, beef, shrimp and I think pork too. I wouldn't bother with the shrimp again. It was really tiny shrimp and just ok. Chicken was excellent as were the veggies we had. We had the peanut sauce and the teryaki ginger. Both good.
The lettuce wrap appetizer is good. Veggie eggrolls are really tasty too but they were a bit too greasy for my taste.
I will definitely go there again next time I'm in Cozumel. It's across the street from the new Municipal Plaza. The restaurant is small, about 5 or 6 tables. Eat in or take-away. They deliver too.

ANY of the above restaurants will cook something to order as well...meaning, you can ask them to grill your fish/chicken, etc. with no oil and they will happily oblige
I'm no "Doctor" per se, but I'm happy to oblige with medical advice at any moment. As for eating in Coz, I highly recommend a diet that covers the 6 food groups: You got your tortilla group, beans group, carnitas group, salsa group, avacado group, and cerveza group.
OK Cozaholics... who can name the restaurant in the picture?????
