Where to dive: Wherever the boat is going. It'll be great, regardless. Make sure whatever dive op you go with has an accurate (no exaggerations) accounting of your skills and experience.

Where to eat: Many great choices; here's my (not so) short list in no particular order...

El Capi Navigante
Santiago
La Perlita
El Moro
Sonora
La Choza
Pancho's Backyard
Casa Denis
The Lobster House
Palmeras
Los Gavianes (spelled wrong, I'm sure)
La Morena
Los Moros del Morritos
Prima
Acuario
La Cocay

Things to do (besides diving and eating):

Go fishing for marlin, sailfish, dolphin, barracuda, and tuna.

Rent a car and circumnavigate the island, stopping at the little beach clubs and playing in the surf. It's pretty much an all day affair if you do it right.

Take the ferry across to Playa del Carmen, rent a car and go to Tulum and/or Coba.

Dive the cenotes over on the mainland.

Catch a skip flight over to Chichen-Itza.

Play golf if you are so inclined and can afford it. Play miniature golf if you are so inclined and can't.

Go parasailing.

Lie in a hammock with a supply of cold beer and a good book.

Cruise the shops and flea market.

Sit and stare at the water. Seriously.

Sit in a sidewalk cafe and laugh at the sunburned cruise ship "pod people". Thank your lucky stars you're not one of them. ;^)

Ggunn gave a great list! I would only add - when you drive around the island, take a look at the Punta Sur Park on the south end of the island - small Mayan ruins, crocs and other wildlife, and great ocean views. Also, ask for an upper floor room at the Fiesta Americana - it won't cost any more, and the balcony is a beautiful place to have morning coffee or watch the sunset with a beverage of your choice. Welcome to the board, and don't forget to give a trip report when you get back!
