    Let's talk Gluten Free!!!!!!!!

    hi all, ive been having some issues and seeing a doctor (zero iron levels which affects my soduium, salts, hormones, protiens blah blah blah levels) - oh, and i also havent had a thyroid for about 15yrs

    i have been lucky enough to have found a good doc and instead of whipping out the prescription pad he is talking about a 10 week detox and a gluten free lifestyle to improve my system (i gotta sit down with him on the weekend and spend an hour or 2 going over stuff)

    ive done the google thing and i gotta be honest, im already eating ALOT of fresh organic fruit and veggies and very little processed & packaged foods so what else can i do???

    soooooooo .... is anyone out there already doing gluten free? any tips, hints, recipes you can give me? wanna discuss some symptoms you have suffered to let me know if im on the right track???

    I would say move to Eugene OR. I did it to detox. It is very tuff, well living in the south. I love pasta I found a gluten free one that is not that bad.

    thanks caver but thats one of the reasons why im so lost on this..... i can honestly say i havent had any rice or pasta since may last year

    are you eating any less or different types of protiens?? some things i have read is also to avoid red meats

    We are getting away from cow dairy. soy milk goat milk, and cheese. Started eating more tofu, and less meat. adding in a Soy or goat whey protein shake.
    The cow dairy can make your body produce lots of stuff.

    My son can't eat wheat

    At first it was a major pain but he has been gluten free for about ten years.

    he has JRA and it inflames his joints. His rheumatologist just rolls her eyes, but we have chosen to stay wheat free anyway, (especially since she is no picture of health herself)...sorry i had to add that, it is tough to go up against the medical community at times. I get so frustrated when pediatric specialists don't listen to the mom. It really stated when he was a baby--right away. The spitting up and colic, whereas my other baby was easy peasy.

    Some of his favorite items are: those frozen wheat free waffles from the health food store, tapioca bread for french toast, CORN tortillas are a staple, as are Asian rice noodles.

    My daughter makes him choc chip cookies with rice flour and they are very good. (Just subsitutes it for the wheat flour in the Nestles regular recipe)

    The teachers and the doctors all fussed about how he couldn't have cake and stuff with the class and basically did not support it. I gave them some money and suggested they buy some popcicles or something.

    His gut blows up and he starts to limp if he has gluten, I don't care what they say. I eat wheat, so I am not just trying to torture us all....

    It has gotten much easier. The social issues have receded since he is older now. His father wants to re-try the wheat thing and I am like , "WHY?"

    He tested "allergic" to it by a DO but his regular docs and dad are not really buying into it. But none of them spend enough time with him to see what happens.

    White corn tortillas are our answer to bread...and rice products.

    I am a big believer in supplements and take B12 shot once a month. Calcium is super important and has been in the news a lot lately about it's protective effects for certain cancers. I take it with magnesium every day.

    (I am sure you are on thyroid replacement, right?)

    The supplement that helps me the MOST, if I could only choose one is Omega threes (fish oil--I take 3 Gms daily, 3000 mg) Besides stabilizing mood, there is some evidence that joint inflammation is helped as well. (not to mention the CV benefits...)

    FYI

    If any one lives near a Whole Foods Market, they have a great Gluten Free section( packaged goods) and one of the Bakers for the company has a gluten problem and makes Gluten Free baked goods, and the Corp. has included them in their offering at their stores ( very cool idea)

    im thrilled that most stores seems to have opened up their minds to gluten free and applaude them

    even my local stores carry an aisle on gluten free that inc choc cakes/biscuits/cereals and the usual flours/crisp breads

    i reallyi notice the difference when i eat normal bread and gluten free bread now!

    the gluten free isnt as soft & moist as the bakery bread and it costs 4 times as much but i quite like it

    even my butcher now stocks glutten free snags and their chicken, honey & sweet corn snags are yummo!

    When I visited Australia recently I noticed that gluten-free products are everywhere (at least on the east coast). I notice things like that because my brother has celiac disease and has to follow a gluten-free diet. Gluten-free products are becoming more available in the States (at least in major metropolitan areas) but they were ubiquitous in Australia. Restaurants even advertised that their pizzas were available with gluten-free crusts!
    I don't know why anyone would choose to go gluten-free without medical necessity, but it is certainly easier to do so in Australia!

    I haven't changed weight in about eight years and being over 40 than is quite a feat. Some of his studies and recomendation will also help with body functions that might not be related to the original reason you are going gluten free (i.e. thyroid issues).

    what is a snag?

    Does anybody know what those rice noodles are called and where you get those?

    I am thinking my boy might like those in place of pasta.

    they have these new gluten free english muffins, kinda corn bready in texture, very good. I use them as hamburger buns for him.
