Is there some website where we can get an idea of what current water temperatures are all over the world? Would be nice to know ahead of time what they are so I could plan better what type of wetsuits to bring along.

The NOAA site doesn't cover the whole world, but does cover a good chunk of it. Real time data feeds and historical info from buoys and weather stations.

For example this page gives average and hi/low water temps in the Miami area by month for a 10 year period.

This site gives a satellite thermal image of the whole world.

I usually e-mail some of the local dive shops or resorts and they are always accomidating. They may give you some pitch to dive with them or something, but, they are usually straight up in their advice. Just type in the destination on the net and your search engine will give you all kinds of places to contact. Especially since weather patterns are difficult and sometimes an area will have freaky weather about the time you want to go there.
