Whatever you do, you must do a manta ray night dive. I like diving with Keller at Jacks Diving Locker because he runs a manta research foundation, so I doubt there's anyone else who knows as much as he does. Take a look on shorediving.com, they have a pretty comprehensive and accurate list of good shore spots on the island. I like the old airport area personally.

I'd check out Big Island Eco Adventures for a cool topside experience, they're a great zip line up in the Hawi area.

Eat the macadamia nut mud pie at Huggo's :)
