The strain has become too much for the strain protector on the canister-side of my cord, and it's no longer doing its job. Does anyone have a teardown guide for these lights (HOG 21W HID, LightMonkey, probably others)? How big of a task is this? Is it o-ring sealed or (more likely) glued in?

what are you doing to that poor light?

Just send it back into light monkey....

The glad is neither glued nor O-ring sealed. You have to undo the glad, which usually takes a special narrow crescent wrench though you can use a crows foot if you have it, and then have to unsolder the cable inside the canister, then slide a new strain protector on and put it back. It's not hard to do, but sending back to light monkey is probably the best way to do it.
