I’m selling some brand new XS convertible valves with vindicator handles, pm me if your interested
If you look to buy these make sure you don't have 7/8" threads in those tanks. Are they 3500 psi or 3440 psi. If they are 3500 psi cylinders convertible valves will not fit.

3500

@TooManyHobbies just go DIN, don't bother with yoke. There are apparently some stock 7/8 200bar din valves that accept inserts but I have only ever seen pictures of one set from one person and have never seen them outside of the tanks. While you can machine down standard 200bar din valves if you have a machine shop *which is what I suspect those actually came from*, then by all means no harm in machining them down, but if not, just switch to din regs and be done with it

I appreciate it, but from what I’m learning, swapping valves on the 3500psi tanks to yoke could be a bad idea.
Yes, if they are 3500 they are 7/8 thread and 3/4 won’t work. You can find din valves for them but they are $$$.

To my understanding most valves are chrome plated brass. If you machine them down you take away the chrome plating where you machine.

I think that can be a bad thing.

many oxygen valves are unplated brass on the threads. It's not a big deal since they are in a dry section and not exposed to the water when diving

You can have your first stages converted to DIN. I agree with @tbone1004, just make the conversion and be done with it. Later if you decide to go on a fun Caribbean dive where they only have yokes, you can just use a simple yoke converter on your DIN first stages. It works great and is what I do.

Should I get a yoke removal nut or just make it work with a big wrench?

The conversion requires a kit. I understand that it's pretty easy to do, but I've never done it myself. You'll need to contact deep 6 to get a kit and instructions on making the conversion.
