So I’m looking at getting a dry suit, I realise the obvious differences between that and a wet suit. But they say I need a dry suit class! Do I or can I learn by myself? Is it a cash grab for my local dive shop?

My local shops include a free class if you buy from them.
The drysuit class is a nice one to have. If your suit is in the shop for some reason and you want to dive dry? Try renting a suit without that drysuit cert. Probably won't happen. Liability issues. Just take the class. It is useful.
A number of folks here like the Seaskin drysuits from the UK. You order direct from the factory. Price seems to be pretty good. There is an entire thread on that under exposure suits. Me, I won't buy a suit from a company that doesn't have a US dealer.

Well I do see a problem with ordering online, I’m 6 foot 1 inch, 260lbs. Not particularly overweight but wide shoulders and a great amount of upper body strength. Not bragging just saying. At work I’m always pulling, pushing and lifting over my head. Anyway. By weight it says I need an xxxl but then it’s to long!
Go to your local dive shop and talk with them. Sounds like you'll need a custom/made to measure suit. Happens to a lot of us. You're in the Mitten State. I'd expect shops there sell a fair number of drysuits due to the fab Great Lakes wreck diving.
