We have a one night stopover in Port Moresby on the way up to Walindi and a 6 hour wait on the return journey. Can anyone advise what the prices are like at the airport for food and water? Is it a better idea to book a day room on the return?

There are a couple of cafes and a few basic shops at the airport (before you pass through security). Prices are ok, beers,cokes,snacks all ok compared to Oz airports. You will need local currency , you can get this on arrival. The cafe is ok , we killed a couple of hours there. You can get a local card to get wifi internet access.
I would not bother with a day room for 6 hours. Chances are you may be delayed anyway on your domestic flight.

I read on Tripadvisor that we are able to get a shuttle bus to the Gateway hotel and use the facilities for free, so we may do that if we are not delayed.
 
Take a shuttle to the Airways Hotel and hang out at the poolside restaurant. Shuttle is free and it's about a 5 minute ride. They take credit cards there. No need for Kina. Much nicer than the cafe in the international terminal.
