Camel Diving in Sharm offers an optional 3rd dive. When the weather is not too cold or too warm, it is an attractive option. They are also heavily into Nitrox.

Indeed they do - however, not in Eilat! :D
 
People can easily do 4 dives a day, more with nitrox, but it's the quality that counts far more than quality.

Eilat, with a small dive industry, seems very by the books (DAN insurance requirement) and I think dives will take longer than in Aqaba or Taba. They will also cost about 3 times as much.
 
If you are planning to dive in Eilat, I would highly recommend Snuba Divers shop. It is very relaxed, very affordable place right on the beach, less than 500 m to Egyptian border. Good rental gear
