There's no course for diving with a pony tank at any agency and especially not in Croatia. Basic tech or adv nitrox does not teach or promote pony dives of any kind. What they do cover is deco tanks - something completely different. At least by means of gas volume and mount style, not mention...
The moment you add a deco tank or two to this rig you'll realize why the inflator IS too long. And why the plastic clip/strap thing is also not too fun.

If you do need both, it makes sense that the backup is on the other side, by the compass on the left arm. At least for the sake of differentiating the primary timing device to follow (the one on your right arm)...
Why? Simply because they can use a different one. :)
I think that you better discuss these things with your instructor. Learning deco diving online is not really a good way to start (for your own safety). Equipment questions are one thing but where you're aiming seems like you're not familiar...
Cannot comment on the computers, as I use bottom timer for trimix dives, but just one thing to clarify: deco is not exact science.
When your computer says deco is done and your body disagrees you end up on O2, in a chamber, or worse. So, whom do you trust? Also, computers and water do not mix...
It will cost you approx 0,25-0,30 kn/L, take the % of He in the mix you need and multiply with tank volume x operating pressure...it's not cheap. :)
Of course, depending on your contacts, you can get it cheaper, but this is the commercial price.

Cressi over here does not stand for anything special in reg world, and I live 30mins from Italy. They apparently did improve over the past couple of years, but I don't have experience with them to share. Go for what gets serviced more easily...
Settings - trimix diver on I suppose. I don't remember exactly what I did but it works. :D

Tried Clynelish yesterday, tasted very mild comparing to the others already mentioned. Had a a nice Partagas #1 alongside. :D
I don't think it makes sense to comment the 2 minute aspect, I'll just write that one to 'for training purposes' or whatever thing.
However, other questions are valid enough and would be interesting to hear from the OP.
The pp02 increase seems a bit too steep, from 0.41 to 1.54 during first gas switch. Why not three deco gases, to keep the pp02 at a more balanced level during switches?
It seems a lot of precaution was done to avoid ICBD (which is debatable anyway like you said) and ppN2 spikes, but the pp02...
Advanced rec diving is not quite the same as multi stage diving (that is, unless you like carrying stages around just for the fun of it), actually, besides being underwater & hopefully breathing while at it, they have very little in common. It's a brutal simplification, but pretty much there...
I guess if you can try them both to see how they trim out, it would be the sanest thing to do.
I use 2x12 232 bar version, I have not much use for 300 bar tanks. And yes, you will have extra gas providing you can get them filled to 300 bar.
Also, the gas laws change a somewhat at pressures...
