Interesting about the chopsticks.... people down here don't typically use chopsticks.

Most of the local noodle shops / stalls / carts in Phuket (where we regularly eat from) do have chopsticks on the tables in the long stainless steel boxes. But as you said, the majority of Southern Thai people tend to prefer the use of spoon and fork.
