During a night diving with one hand holding a torch, we can point our light to another hand to make hand sign to your buddy. And we can also make "ok" or "not ok" simply by waving our light. But how do we make hand sign that needs two hands in a night dive? For exmple, safety stop or 90 bar hand sign.

I like to be able to let go of everything and not lose anything. If using a handheld torch I clip it to the bungee holding my compass or computer on my wrist. The clip/lanyard is long enough that I can use the torch normally, but if I let go of it to do something complicated or accidentally it just dangles.

Get the "Hand Signals for Scuba Diving" by the NACD (National Association for Cave Diving). The signals all can be done using one hand. From the introduction: "The standardized set of hand signals found in this manual can enable recreational and technical divers to communicate with each other more quickly and effectively, minimizing confusion, while using one hand."

those are about all of them though we usually use a closed fist as "stop" or "hold" instead of the flat hand which can be a bit confusing.

For time, instead of pointing to gauges which you can't do in the dark, you use your index finger and draw a circle like you are drawing a circle around the face of a watch. We usually don't use the time signal though since it is usually preceded by deco.
i.e. for "how much deco" where you give your time to surface, or time at stop which is usually communicated pre-dive. My team always uses time left at the current stop depth.

"question"
"deco"
"time value"

If you are asking about deco at a specific depth and that is what you guys want to do
"question"
"deco"
"depth"
"depth value"

for NDL left, you agree on the surface that you are doing no deco diving and that if you are going to ask the question of how much time you have left at the bottom, that the sequence goes about like this
"question"
"deco"
response
"deco"
"time value"

some cave specific ones in here, though are useful for all divers if you are diving in areas with lines
