I've eaten different shark over the years, some was excellent-like swordfish, some was barely edible. It was all fresh and soaked in salt water before cooking to remove the urea/ammonia taste. Does anyone know which sharks have the best flavor and texture? What type of shark do they use in fish-n-chips?
