I just made this the other day and plan to make them again - when I do I will season the meat a bit more and make a bit more of the sweet sour sauce -


Waikiki Meatballs


Beef meatballs flavored with ground ginger, simmered in a
sweet pineapple sauce. Prep Time: approx. 20 Minutes. Cook
Time: approx. 25 Minutes. Ready in: approx. 45 Minutes.
Makes 6 servings.

1 1/2 pounds ground beef
2/3 cup crushed saltine cracker crumbs ( I use bread crumbs)
1/3 cup minced onion
1 egg
1/4 cup milk
1 1/2 teaspoons ground ginger
1/2 teaspoon salt
1 tablespoon olive oil

2 tablespoons cornstarch
1/2 cup packed brown sugar
1 (15 ounce) can pineapple
chunks - drained, with juice reserved
1/3 cup white vinegar
1 tablespoon soy sauce
1/3 cup chopped green bell pepper


Directions
1 In a large bowl, combine ground beef, cracker crumbs,
onion, egg, milk, ginger and salt. Shape mixture by rounded
tablespoonfuls into meatballs.
2 Heat olive oil in a large skillet over medium heat.
Place meatballs in skillet and cook until evenly brown, and
meat is no longer pink. Drain excess fat.
3 In a small bowl, combine the cornstarch, brown sugar,
reserved pineapple juice, vinegar and soy sauce. Mix until
smooth, then pour into the skillet with meatballs. Cook,
stirring constantly, until mixture thickens and boils, about 5
minutes. Stir in the green pepper and pineapple chunks. Heat through.
 
Uhu, gutted and scaled. Several slices across the grain of the flesh. Insert garlic and ginger. Wrap in foil and steam for 30 minutes. Open and pour smoking hot peanut oil with garlic, ginger, and chives simmered in it, over it....MMMmmmmmmm
 
I can't decide if this is a main dish or desert . . . but I like it. Place several taro root in a pressure cooker and cook at 10-15psi for 2-3 hrs. After cooking slide the skin off, slice the meat into 1/4" slices. Glaze by frying in skillet with butter and brown sugar until the sugar mixure turns hard on the meat. Enjoy -

Kokonda: (Fiji)

1kg or two pounds of raw fish fillets cut into chunks
one finely chopped onion
up to 1 liter or two pints of coconut cream (fresh is best)
two green chilis sliced lengthways and deseeded
a tomato cut into eight.
lime juice to taste.

Mix together and leave for at least an hour in the fridge

serve in a coconut shell lined with a banana leaf
 
We served the meatballs (rolled over 300!) at the wedding and they went over great. I baked them and they kept their shape much better then if I had fried them.
 
been awhile since this thread was active, but with mangos in season my neighbors made the following today:

Mango Cheesecake - Ono!

Graham cracker crust (or crush some grahams into a pie pan)
1lb of cream cheese whipped with about 1/8-1/4 cup of mango juice (left from slicing those juicy ripe mangos) put in the bottom of the pie shell.
2 large mangoes slices or cubed (dpending on what you like) and laid on top of the cream cheese.
Cover the rest with whipped cream

Freeze, slice and serve - makes 1 very generous serving... or 6 regular ones

Beef Broccoli

1 1/2 lbs of boneless Beef, sliced
3 lbs of Broccoli
2 tsp Ginger, Minced
1tsp Garlic, minced
2 c. Beef Broth (4 cubes, and 2 cups of water)
1/3c reduced sodium Soy Sauce
1 Tbs. Cornstarch w/2Tbs Water

Saute beef with boullion cubes, garlic and ginger. When browned add 2 c. water and soy sauce. Let simmer on low for 20 min. Thicken sauce with cornstarch/water.
Add broccoli, heat thru and serve.

I love to have extra sauce so I just double the fluids and seasoning.
 
Kalua Pork
2lbs boneless pork
1 1/2 Tbs Hawaiian salt
2/3c Soy Sauce
1/2 tsp Worcestershire Sauce
1 clove garlic & 1 sm piece of ginger (crushed)
2tsp liquid smoke

Mix all ingredients (except meat and cabbage) and rub it on the meat. Place meat in the pan, added the marinade and seal with aluminum. Bake in over for 3 1/2 hours at 357f. Add the cabbage (cut up), reseal and back for another 30 min.

The meat will just fall apart., mix it up with the cabbage.

This is exactly the recipe that I was given... if I were to make it again I wouldn't add the salt. The soy sauce is salty enough.
 
here's one for kidspot neighbor (mango's):

Mango Bread
2 c. flour
2 tsp. baking powder
2 tsp. cinnamon
1/2 tsp. salt
3 eggs, well beaten
3/4 c. oil
2 c. diced mangoes (mango's)
1 1/2 c. sugar

Combine all ingredients, bake in loaf pans at 325 degrees for 1 hour.
You can all raisins and or nuts if you like.
