I'm getting an Atomic Z2x regulator and I'll be diving in Victoria, Australia where it's about 20 degrees Celsius in summer and 10 degrees Celsius in winter, do I need to get the 1st stage sealed or not?

For that temp range an environmentally sealed first is not required......

Sealed first stages are also better for low vis dirtier water, but that should not be an issue for you either.....

If you were diving in waters below 40F or 4C then I would recomend having a sealed 1st stage.
