Depending on how bad the blowout is you can often recover it in Raw processing. The slug photo is definitely recoverable, even at the JPEG level some processing will help it along. Always better to get it right first, but if you're in a group that wanders off, shoot first and recover it in processing. On the slug photo one of the issues is no light getting in below from top lighting, a different strobe position would help that out. If you would like I could process this image so you can see what I mean.
