That's because everything fragile was broken off by cavern tours.

Possibly, at least to some extent. But then I'd expect to see fragments on the bottom. Not so much...
Or, as Lynn pointed out, the gold line was run specifically to avoid the more delicate structures. There are plenty of delicate structures visible from the line, but not reachable by anyone following the cenote tour guidelines.
