Well, you have several choices. And of course things are getting ready to change at DEMA in a couple weeks. Here are your choices for now,
Sony cameras,
HVR-Z1U
HDR-FX1
HVR-A1U
Panasonic
HVX200
Canon
XL H1
All of the above cameras have their own pros and cons. You might check out http://www.wetpixel.com
There are quite a few discussions on their forums about just about everyone one of these cameras and housings.
Housings
Gates, Amphibico and Light and Motion all make housings for the Sony cameras.
Gates is the only one that makes housings for the Panasonic HVX200 and the Canon XL H1.
I believe that Ikelite makes housings for the Sony cameras also.
Announcements for other cameras are expected at DEMA. You may see housings for some of the following cameras in the next few months.

If you are interested in a good quality entry level housing, Gates, Amphibico and Light and Motion also make housings for the Sony HDR-HC3.
