Why not just switch to your octo and end the dive? I mean, that seems like a pretty easy option.

Because you are depleating your gas supply very quickly and every breath may count so why take air from the system (octo) when you can reclaim some of the freeflow air that would otherwise be wasted.
Another advantage to the sipping method is you can get the loud, bubbling cloud away from your face for a few seconds so you can see where you are going and if your buddy is right next to you with aid.
