Do these shops normally use yoke style tanks ?

In our three trips, I have seen nothing other than that.

There were divers on one of trips that were using DIN who brought their own converters.
 
Ended up doing two dives at Pelican rock. Tried Lands end but the area had pretty good swells. Water was warm and just used my 2mm shorty. The guide was in shorts and a rash guard.

Which dive op did you end up using?

We were down there close to the end of October, diving with Manta Scuba.

On our first day, we did Pelican Rock and cruised down to Land's End, and it was similar to what you describe. We did our second tank at Neptune's Finger.

Used Dive Cabo. They best aligned with our schedule.
