I am a recent graduate of UH Manoa (BS and Msc). They do an excellent job of involving the dedicated student into as many extracurricular activities as the student has time. During my time there, I milked cone snails, tagged a lot of sharks, photographed even more sharks, worked for an aquarium, and made professional contacts that I still work with today. Two recommendations if you attend either Uh Hilo or Manoa, get involved in the Marine Option Program (even if you don't intend on getting the cert) and take QUEST (Quantitative Underwater Ecological Surveying Techniques-basically scuba science school). Feel free to drop me a PM if you have any questions.
