Sounds like you will need to accommodate your non-diver friends.. That's another reason why High Springs is a good spot. Canoe/kayak with surface support, tubing and snorkeling are all readily available. You also have a couple decent restaurants nearby like 'The Great Outdoors' and 'El Patio',, and just a few mins from Alachua and Gainesville if you are looking for a little more variety.
Just another thought if you can squeeze in an extra day away from your friends.. Taking a cavern diver course really opens up a lot of diving options in this area. Even if you don't plan to ever dive the caves, a cavern course will really help you understand what's involved and might get you a dive guide to show you around..
