I'll be visiting Edinburgh for a week of vacation this January... is there anyplace to dive locally? Any dive charters operating that time of year? Is it worth my while to drag my drysuit along?

St Abbs is about an hour away but at that time of year you wouldn't be guaranteed a dive given possibility of bad weather. The west coast is 2 hours away and is more sheltered - you would get a dive somewhere there whatever the weather. Temps likely around 6 celsius in the water, likely less on the surface. Vis could be anywhere from 2m to 10m and depending on the weather, could be dark or bright. You could hire a suit rather than you bring your own on the off chance. I instruct for a centre there so PM me if you'd like more details.
