Question about DX-2G manual white balance: If I manually set the white balance in one mode, does that setting apply to all other modes also or only to the mode I was in when I set it?

The manual wb only is active in the mode it was set, once the user exits out of that mode the camera reverts. In the My 1 or My 2 modes, you can preset wb, iso and other settings.
