It is documented in the housing manual--barely. (In the WP-DC28 manual for the G10 it's on p.14 in a boxed area labeled "Using the Control Dial".) Easy to miss in the manual though so yeah, sure could use more emphasis from Canon.
Basically anything you can do with the controi wheel on land can be accomplished in the housing with the method described above. It's easy to get used to--if you don't wait until you are uw to try it for the first time! Maybe Canon ought to just say "See the Canon Corner Forum on SB, they clarify this quite well..." ! // ww
