Does anyone know if it is safe to submerge a Nikonos lens (such as the standard 35/2.5 lens) that has a rear lens cap on it? (This is assuming that the lens has a good working o-ring installed.)

I wouldn't do that, especially more than just a few inches below the surface of the water. Even with a properly lubricated O-Ring, the issue I think would be that the rear lens caps on those lenses(at least the ones I have) are not machined like the mounting surface on the Nikonos cameras, so the O-Ring is not going to make the same water tight seal with the rear lens cap like it does on the camera.
