I wanted spinich pie...what do I do. HELP.

I voted for banana, but then Aquahump mentioned spinach pie and now I want to change my vote.

Anyone have any good recipes for spinach pie or maybe spinach knish, spinach quiche, spinach puffs, or just plain ol' spanakopita.

I did cook some spinach tonight- I tossed it in with some couscous, lentils, walnuts, and mushrooms.
