Oops! I stand corrected... I was so excited when I thought I could actually answer a question here on Scubaboard that I didn't read it thoroughly.

growing up in the cornfields of the midwest, anything corn related sounds good to me!

I'm like Bubba from Forrest Gump, but with corn:

corn on the cob, corn off the cobb, corn fritters, cream corn, roasted corn, corny dogs, corn tortillas....

even most of my jokes are corney:D

Hopefully, someone will get this recipe by tomorrow. I want to make it when we take our boat to Catalina.
 
From info here and on Coz my Coz.com, this is what I have come up with so far. And it is good. We tried it tonight. Was a little supprised to find the spice ingredinents but we did at a Mexican groceria on the first try.

Frozen whole kernel corn
epozote spice
butter
water
simmer all this

Top with:
Cotija cheese )or parmesan
chili arbol molido powder (or mix half paprika and cayanne)
mayo
lime juice
salt and pepper

Put a little of the buttery juice on top to help melt everything just before serving.
Kraft makes a mayo with a limon flavor that we used rather than the lime juice. Worked well but may try a little lime juice next time as well. tomorrow with left overs.

This should be close to what Christi comes back with.
