Valladolid is a good stop, especially on 5 January when they have their festival/parade going on. East of town there's a cenote/cavern that's accessed through a tunnel carved in the rock, they allow swimming/snorkeling there.
Palenque is great eary in the morning when the mist & fog is still wrapping around things (before they open) verrry impressive.
Don't eat the mushrooms.
