My favorie Jack receipe (unless you have a smoker). Filet the Jack. Cut away the red meat (mainly along the spine). Cut it into finger size stips. Soak in whole milk. Dredge in beer batter and toss into the fryer until golden brown. DON'T TELL ANYONE IT'S A JACK. The meat will come up nice and white and tender and most people will guess it is a snapper or grouper.
