When you are at the Georgia Aquarium you might want to ask the dive masters about the the Assistant Disabled Diver course. Some of the dive masters at the GA are certified to teach the class, which would allow you to help with the Wounded Warrior diving program. Note: this specialty is not taught at the GA, but several of the dive masters there are involved in the program on their own.
 
My all time favorite unique specialty was Dee Scarr's Touch the Sea in Bonaire.
Benign interactions with critters.
We had cleaner fish manicuring our hands, fed an anemone, petted a scorpion fish, etc.
And her lectures are both informative and entertaining.

So the question is.... What are some of the Specialty courses out there that are truly unique and are fun doing?

I know a guy who wrote a cuttlefish/squid specialty but you'd need to travel to the Netherlands in May to take it.

If you go to Crystal River Florida you can get a Manatee Specialty. If you travel to Denver, Colorado there is a dive shop where you can get an Altitude Speciality while diving in the Downtown Aquarium. Just diving in Denver, CO is at altitude since it is the Mile High City so doing it in the Aquarium would be the unique part.
 
You might want to try this one, Diving for Science : Aquarena Center : Texas State University

Only useful at one dive site in the world.

Wonder if it could be used as part of scientific diver training? There are other educational institutions that have science diver programs that might acknowledge such training.

There's the Aquarium Diver specialty offered at Baltimore Aquarium.
Vietnam Diver from Rainbow divers in Vietnam, also Vietnam Nudibranchs
 
Maybe, the major focus of the class is scaring the hell out of students regarding the Endangered Species Act.
 
Since you are in UAE and familiar with Al Doom, sorry Al Boom, you can can take their shark dive speciality in the Dubai Mall Aquarium for few dirhams.

Personally I would recommend doing something like Equipment Specialist, nothing better than knowing how your gear works, but choose your instructor carefully.

Personally recommend Pavilion Divers and Atlantis Dive Centre for professional courses
