On the upper TX coast (coming out of Sabine Pass, TX) the depth is rather easy to guesstimate for most areas that a charter trip is going to bring you (<100 miles.) Past 40 miles or so, the depth in feet is roughly equal to the number of miles offshore that you are...
 
Are there tankers and other mechanical hazards?

There are supply and crew boats that you must stay out of the way of when anchoring off the boat, However this is usually not a problem. The biggest hazard is the fishing line. We usually will bring up 10 or so of like new fishing lures to pay off our boat sitter.

How deep and what's there to see?

The rigs we dive are anywhere between 100fsw to 350fsw. The rig legs and structural members are covered in life. All types of fish, excellent for spear fishing or just hanging out and watching.
