I would first cross the PADI AOW off the list. Spend your money in GUE fundie and see if DIR is right for you.
As or the actual choice of dive equipment, I think you better off talking to a local instructor. Double HP60/80 is probably not something you want to dive with a 3mm wetsuit in warm water. Also for the choice of AL vs SS plate, choice of fins (heavy vs light) .... You save a lot more money if you buy the right gears the first time than if you think you are buying the right gears and turn out you have to re-buy some.
