What are the appropiate focusing setting for my Canon SD780IS?

Hello, I take most of my photos from a 2'-10' distance and at a depth of under 25', and I'm wondering what focus settings would give me the best results for photographing fast moving fish, coral and such. I'm not sure whether to use evaluative, center weight avg., or spot focus metering? I'm also wondering if using "Servo AF" would be beneficial to me?

I just added a Big Blue FF1x5W AFO LED Light to my setup which I hope will help also.
