I think these good people here have given you some good advice as they have all been here and know the Keys and what it has to offer in diving.

You can call any dive shop and they will let you know what is on the schedule for the week. wreck/wreck, wreck/reef or reef/reef. But it all depends on that day and how the weather is looking and sea's. No since in going out to a certain spot if the sea's are just not doable. It's always the captains call.
