If you want to dive with sharks, and you're not yet certified I'd say it has to be the Bahamas from Ireland. The flight's not too long and it probably has the closest easy guaranteed shark diving. My advice would be to do half the course at home - the theory and pool work - then do your qualifying dives on the trip. This isn't the ideal way to learn perhaps but means you can a) do the learning without the added distractions of wanting to be off in the sun/sea/bar enjoying your holiday and b) spend your hols actually diving.
 
The best destination for you is the Red Sea.
There are sharks in abundance, it is not to far, prices are very good and I mean very very good at the moment.

However here are my words of warning. It would be much better if you could learn to dive before you go. At least as far as theory and pool sessions and do your OW dives on vacation.

Remember you will be just starting to learn to dive.
This is most fantastic sport in the world but it does have risks that go along with it.
Take your learning seriously and realise a 1 week course doen not make you into a Jacque Cousteau.

Do you think you can remain cool with sharks brushing against you. Sharks are definitely nice to dive with but they are wild animals and are not always predictable. it will be a real task overload for a new diver but then every one is not same. Hope you get a good instructor on your shark dives to take care of you because when I finished my OW I was not ready for sharks, I was more bothered about clearing my masks, checking my SPG and controlling my buoyancy which was absolutely horrible.
